RECIPE: Swiss steak and potatoes - BYU-I Scroll

When the season turns cold and the snow starts falling, there’s nothing better than a hot, hearty meal of savory spiced meat and earthy potatoes to fill you up. This is a great Sunday meal that can be waiting for you by the time you get home from church.

Ingredients:

1-2 pounds of beef round steak (elk is best if you have access to it)

1 4-ounce can of mushrooms

5 or 6 average potatoes (any type)

2 cups and 2 tablespoons of flour

4 tablespoons of oil

2 tablespoons of butter

Salt and pepper to taste

Garlic powder to taste

Milk to taste

Instructions:

Preheat the oven to 325 degrees.

The steak should come thinly sliced. Cut the slices into pieces roughly the size of your fist.

Salt and pepper both sides of the steak pieces. Cover the pieces of steak in the 2 cups of flour.

Cover the bottom of a large frying pan with oil. Heat on medium. Brown the steak pieces for a couple minutes on both sides. They should not be cooked completely through.

Place the browned steak in a 9×13 glass pan. Save the oil.

Pour the can of mushrooms, liquid included, into the frying pan of leftover oil. Simmer and stir on medium-low heat to make a gravy.

Fill the mushroom can with water and mix in 2 tablespoons of flour. Pour this mixture into the gravy and stir until thickened. Remove gravy from the heat and pour over steak.

Add another can of water to the oil and mushrooms to fully cover the steak.

Cover the 9×13 pan in foil and bake at 325 degrees for 2-2 1/2 hours.

While steak is baking, chop potatoes into bite-sized cubes and boil on high in a pot of water.

Once potatoes are soft, drain them. Add butter, garlic powder, salt and pepper to taste and mash the potatoes.

When the butter has melted, slowly add milk and continue to stir until mashed potatoes have reached desired texture.

When the meat is finished cooking, serve and enjoy!

Tips:

– Adding a little water to the meat sauce makes a great gravy for the potatoes.

– Add steamed vegetables for a well-rounded meal.

– Apple or grape juice is a great accent.
