HOLMDEL, NJ: The first event of 2020 for the Holmdel Kiwanis is a delectable spread of filet mignon! An event that could have a slogan “We ain’t just steak!” because the annual Steak Bake also features pork loin, roast chicken, pasta, roasted potatoes and vegetable medley PLUS filet mignon!  The event is held on February 29 from 6-9 p.m. at the Knights of Columbus facility on Route 35 North in Hazlet.  Add to that, cake and cookies for dessert, plus a cash bar and this is a night to remember and it’s still only $40.

The Holmdel Kiwanis is a group of like-minded citizens dedicated to changing their community by improving the lives of children and their families.  The group works with a variety of non-profits with the same philosophy of serving.  Membership in the club is open to anyone in the community that is at least 18 years of age and has a passion for helping others through volunteering to serve. The Holmdel Kiwanis has been serving the community since 1965 and welcomes people to visit a meeting to find ways they can participate.  The Holmdel Kiwanis meets weekly at 7 p.m. at a variety locations throughout the area. To find future meetings visit www.holmdelkiwanis.org.  Please join them for dinner as their guest.  The January 29 meeting will be at China Buffet in Hazlet on Route 35 North @ 7 p.m.  The following week it will be a Bay Avenue Bakery in Highlands, N. Recipe: Pan-Fried Skirt Steak - Minneapolis Star Tribune

Pan-Fried Skirt Steak

Serves 4 to 6.

Note: The only trick here is to work quickly; do not overcook the meat. From Beth Dooley.

• 1 1/2 lb. skirt steak

• Salt and freshly ground black pepper

• 2 tbsp. sunflower or vegetable oil

• Chimichurri (see recipe)

• Gremolata (see recipe)

Directions

Pat the steak dry and season generously on both sides with salt and pepper. If the steak is too long to fit in the pan, cut the meat in half.

In a heavy 12-inch skillet, heat the oil over medium high until shimmering hot. Add the steak and brown well on both sides about 2 to 3 minutes for medium-rare. Transfer the steak to a plate while making the chimichurri or gremolata.

Slice the steak against the grain into thin (1/4-inch slices) and serve topped with either — or both — of the condiments.

Chimichurri

Makes about 2 cups.

• 1 small shallot, chopped fine

• 1 small jalapeño chile, seeded, deveined, finely chopped

• 2 garlic cloves, chopped

• 1/4 c. red wine vinegar

• 1/4 c. finely chopped cilantro

• 1/4 c. finely chopped parsley

• 1/3 c. extra-virgin olive oil

• Salt and freshly ground black pepper to taste

Directions

In a small bowl, whisk together the shallot, jalapeño, garlic, vinegar, cilantro and parsley. Then whisk in the oil. Season to taste with salt and pepper.

• 1 generous cup fresh parsley leaves

• 1 large garlic clove, peeled

• 2 organic lemons, washed and dried

• Salt and freshly ground black pepper, to taste

Directions

Using a sharp knife, chop together the parsley and garlic until very fine and turn into a small bowl.

Using a Microplane or fine-toothed grater, grate the lemons over the garlic-parsley mix and stir together with a fork. Season to taste with a little salt and freshly ground black pepper.

Skirt steak with bold, bright condiments - Minneapolis Star Tribune

Skirt steak is an easy, foolproof cut of beef that’s most often used for fajitas, though it can be much more. It’s more affordable than a rib-eye or filet.

Skirt steak is thin and long with a visible grain. There are two types — outside and inside — that differ in texture and juiciness quite a bit. The outside skirt is more tender and less coarse, about 4 inches wide and about ½ to 1 inch thick, and noticeably longer than the inside cut.

The inside skirt is wider, about 5 to 7 inches, and about the same thickness as the outside and it is a bit chewier and less juicy. To tenderize this type, use a meat mallet to pound it and make it even thinner. The best way to know which skirt steak you’re buying is to ask the butcher.

You can season the steak or marinate it in advance of cooking, but I find that the simplest is the best, allowing the flavor of the meat to shine through completely then serving with a bright, bold condiment.

Use a heavy skillet, preferably cast iron. If the steak is too big to fit, cut it in half. Be sure to dry the surface of the steak, then season it with salt and pepper before cooking. Excess moisture creates steam and keeps the meat from developing that nice firm brown crust.

Sear the steak quickly over very high heat on both sides, slightly undercooking it a little to reduce the danger of going too far. You don’t want to cook the steak beyond medium-rare. Let the meat rest for about 5 to 10 minutes so that the fibers relax and it retains the juices. Slice the steak thin (1/4-inch) across the grain, holding the knife at a 45-degree angle to crate a bias cut. The thinner the slices, the less chewy the meat will be.

The rich flavor of this cut takes beautifully to bold flavors — especially Argentine chimichurri and Italian gremolata. These two vibrant parsley-and-garlic-packed condiments are great on accompanying side dishes, too. Try them on roast vegetables, mashed or baked potatoes, and whole grains. You can also swirl them into mayonnaise for sandwiches and dips.

This dinner is a flash in the pan with a bright, herbal kick.

CAJUN BUTTER STEAK BITES

INGREDIENTS
1 ½ Pounds Steak
3 Tbsp. Tony's Original Creole Seasoning (Divided)
2 Tbsp. Neutral Oil (Grapeseed, Avocado, Canola or Vegetable)
¼ Cup Unsalted Butter
Diced Parsley (Optional)

PREPARATION

Prep Time:

2 Minutes

Cook Time:

8 Minutes

Serves:

6

  1. Wash and dry the steak. Cutting steak against the grain into 1" x 2" strips.
  2. Add steak pieces to a medium bowl and add 2 tablespoons of Tony's Original Creole Seasoning. Mix until seasoning evenly coats the meat.
  3. Heat a large heavy-bottomed skillet over medium heat. Once the skillet is heated, add oil and swirl, coating the pan. Add steak pieces to the oiled pan, ensuring one large side of steak is touching the pan.
  4. Sauté for 90 seconds. Flip each piece onto the other large side. Sauté for an additional 90 seconds. Turn each piece so each is standing upright with the fat side touching the pan (rest the pieces against the edge of the pan if necessary).
  5. Sauté for 2-3 minutes to render the fat. If you're working with a piece of meat that doesn't have a side with fat, sauté each additional side for 30 seconds. These cooking instructions are for medium-done steak bites. For well-done, double cooking time.
  6. Remove steak bites from pan and set aside. Drain excess fat from the skillet, being sure to reserve the flavorful bits at the bottom.
  7. Return skillet to heat and turn to low. Add the butter and additional tablespoon of Tony's Original Creole Seasoning. Stir to combine, being sure to scrape up any flavorful bits stuck to the bottom of the skillet.
  8. Add steak bites to the Cajun butter and toss to coat in sauce. Serve while warm.

Top leaders

But the top legislative recipients of lobbyist meals were part of the Republican leadership or the House or Senate Appropriations Committee.

Sen. Roger Thompson, R-Okemah, the chairman of the Senate Appropriations Committee, said, “I work year around on the budget, meeting with many different people and organizations. Anytime I meet with a lobbyist, they have to report it. I am very interested in learning all I can about the budget needs and the budget impact on Oklahomans. This requires a great deal of time and many meetings.”

Senate President Pro Tempore Greg Treat, of Oklahoma City, received nearly $3,000 worth of lobbyist-paid meals in 2019, while House Majority Leader Jon Echols, of Oklahoma City, received nearly $2,900 in meals.

Treat, who has been a top recipient for the last five years, can determine whether a bill gets a hearing in committee or on the Senate floor. The biggest decisions go through his office.

In 2019, Treat received five meals from lobbyist Brett Robinson, who represents health insurance, energy, beer and other interests; six meals from Robbie Squires, who represents Cox Communications, the cable and internet provider; and five meals from Mike Thompson, who represents the Choctaw Nation, the Epic charter school company and OG&E. Thompson bought Treat’s dinner on New Year’s Eve.

Treat said, “Mike, Robbie and Brett and their families have been close friends of mine and my family for many years, going back to long before I ever even considered running for elected office. As many friends do, we sometimes pay for each other’s meals. One thing that makes our friendship different is that they have to report buying my meal under the ethics rules for lobbyists regardless of what topics are discussed during the meal.”

For the second consecutive year, Freestore Foodbank has selected Jag’s Steak & Seafood to represent the Cincinnati Bengals and Freestore Foodbank at one of the nation’s most visible cooking events held on the eve of Super Bowl LIV in Miami.

Chef Michelle and members of the Jag’s culinary team will participate in Taste of the NFL: Party with a Purpose on February 1, 2020 at The Diplomat Beach Resort in Miami with hosts Andrew Zimmern and Adam Richman.

“Michelle and the staff at Jag’s Steak & Seafood have shown an amazing commitment to giving back to the community and supporting Freestore Foodbank through our annual Kick Hunger Challenge,” said Trish Rayner, VP of External Affairs at Freestore Foodbank.

“We are proud to have someone of Chef Michelle’s talents representing our region at this year’s Party with a Purpose the evening before the Super Bowl in Miami, and can’t wait to see what her team comes up with this year.”

Last year, Freestore Foodbank raised $52,393 through its annual Kick Hunger Challenge — sponsored by TriHealth, providing more than 150,000 meals to our neighbors in our community. Jag’s Steak and Seafood raised $24,593 in support of Freestore Foodbank programs last year alone through the Challenge.

“We are honored to be participating in this great cause and are excited to again be selected as Cincinnati’s representative at Taste of the NFL,” said Chef Michelle. “Giving back is an important part of what we do, and we extend a special thank you to Freestore Foodbank for their work to help feed our community.”

Jag’s also announces it will hold a gift card promotion, adding a $25 bonus to every $100 gift card purchase, and donating an additional $25 of the $100 spent on gift cards to Freestore Foodbank to feed local families. With every dollar donated, Freestore Foodbank is able to provide three meals, which means every gift card purchase can provide up to 75 meals for every gift card purchase made. The promotion will run from Monday, January 13 thru Saturday, January 18 on Jag’s online storefront at jagsstore.securetree.com/gift-cards/.
